Dr.J this is my project of making spinach pastry, which is one of the common food in my country. Spinach roll has been in our tables for many and many years and has been passed thru generations and it will continue to do so for as long as god knows. I will show step by step how did we make them.1-1 pound of fresh green leaf spinach
2- garlic
3-mozzarella cheese shredded 4-butter
5-1 box of phyllo dough pastry sheets
6-salt
In medium pot, we put the spinach to cook it for at list 10 min. Then by hands we have to squeeze the spinach to drain all the juice that comes out from a spinach leaf. We add some salt, and also in the same time we add mozzarella cheese and mixed for at list 5 min.
In another pot, we put the butter to warm it up and malted so its easy to spread around the dough. After butter is compliantly melted we take a cooking brush and have the butter spread around the phyllo dough, then we put the spinach in the dough by rolling it slowly.Than we have to put it in the oven for at list 10 min in a 450.
After cooking done and ready to serve to the table the best drink to get with it is a glass of fresh yogurt.
